In the kitchen #2

Hey there!
This week's recipe : OREO CHEESECAKE! 

This version is the most simplest one that you can make since it won't be needing an oven to bake it. You'll only need to put it in the fridge. 


Here's what you'll be needing for this recipe:

2 cartons Double Cream, 1/4 of melted butter, 400g of cream cheese, 3/4 normal Digestive biscuits pack (depending on your base) and Oreos! ( The more the merrier)

I used this spring form cake tin. It's a 25cm in diameter.

Method:

1. First you need to prepare the base of the cake by crushing those digestive biscuits into smaller pieces. And again, if the size of the pieces are not of equal size please do not waste time of trying to make them. 

2.  After that, mix the crushed biscuits with the melted butter and make sure it is mix well all together. Then you need to spread it onto the base of the cake tin and level it out. The thickness of my base was approximately half an inch. If you feel that your base is too thin than you can either add some more crushed biscuits or leave it be. It's entirely up to your preference. Personally I like the base to be in that size. 

3. Put the cake tin into the fridge in the meantime.

4. Next, in an empty bowl, beat your double cream in the bowl using a hand mixer for about 5 mins. If you don't have it you can also use a whisk but it'll be take roughly double the time when using a hand mixer (Yes, I finally bought my own hand mixer! haha)



5.Once you get this sort of stiff peaks, your cream is now ready for the next step which is beating in your cream cheese. Beat your cream cheese and the cream at a low speed and make sure both ingredient are well incorporated.



6. After that, fold in your crushed oreo biscuits into the bowl. I wouldn't suggest you to use the hand mixer for this part since the cream and the cheese cream is quite stiff at this point and you'll be overdoing it if you keep on beating the mix. 



 7. Finally, after all of your biscuits are mixed thoroughly into the cream cheese and cream, spread out the mixture into the cake tin evenly. And you can start decorating your cheesecake with your own creativity. I've done as simple as I could since I ate some of the oreo cookies for the decoration part. hehe

8. Put your cheesecake in the fridge at least 6 hours but I prefer to do it overnight. The more time it is in the fridge, the more firmer it gets. You don't want to serve squishy cheesecake to your guests now do you?



Voila! My version of Oreo Cheesecake.
